Tomato and Olive Talapia with Tofu Noodles

Sauce:

-Put 1 Tbsp. Extra Virgin Olive Oil in a large pan
-Dice 1/2 of a white onion and let sautee until onions look somewhat translucent
-dice 12 plum tomatoes and stir in with onions in pan on med-high heat
-slice about 15-20 kalamata olives and stir into sauce
-crush or chop 10-12 cloves of garlic
-add into sauce, continue to stir on lower heat
-squeeze out the juice of one whole fresh lemon and add it to the sauce
-Add salt and fresh ground black pepper to taste
-cover the pan and let it simmer, checking it every so often to make sure that the sauce isn't sticking to the bottom of the pan
-Uncover and add fresh basil leaves

-Pour over steamed, baked or broiled white fish, and/or mix into Tofu Shirataki tofu noodles

Frozen Berries with Fat-free Greek yogurt

Put 1 cup organic frozen mixed berries in a bowl
Mix in 1 Pkt. Truvia
Dollop two heaping tablespoons of Fage 0% fat-free Greek yogurt on top
Stir

Great for Breakfast or Dessert!

Summer Asian Crab Salad

In a medium bowl, mix:

4 ozs Louis Kemp Crab Delights
1/2 cucumber cut into chunks or slices (however you like)
1/2 avocado cut into chunks
Add shredded cabbage or carrot if you like
You can also add onion, tomato, steamed/shelled edamame, and/or nori seaweed snacks shredded up

-mix together with a fork, drizzle low-sodium soy sauce to taste and squeeze fresh lemon to taste
-you can also add a drop of olive oil--half a capful--if you like

Makes a great light lunch!

Frozen Banana Chip Desserts

-Slice up 1-2 very ripe bananas into half-centimeter thick coin shaped rounds
-place in large tupperware and put in freezer overnight!

The next day, have them in your Fage Total 0% yogurt with a little agave nectar and sweet cacao nibs, even add a few almonds or sliced red grapes!

OR

Dip a few of them in raw organic almond butter for a snack--I love the kind you crank out yourself at Whole Foods! You can even drizzle a little light raw agave nectar on top of a frozen banana slice with almond butter--but beware of the deliciousness!

OR

Make Jell-O Fat Free Sugar Free Stovetop Chocolate Pudding (zero sugar, very low cal and fat free), put in refridgerator till cool with "skin" on top, scoop out a serving into a bowl, add 5-10 frozen banana slices and a splash of fat-free half and half or skim milk.

Protein chips

Take a soy hot dog, slice horizontally into 2-4 millimeter thin round medallions
-place medallions on microwave-safe plate so that they lay flat and the edges of each round slightly touch each other
-microwave 2-3.5 minutes, or until they become crispy and crunchy!
-let them cool slightly and dip in your favorite mustard! (I love mustard because it has close to 0 cal yet adds a lot of flavor!)

This makes a great light snack! Low carb, close to zero sugar, and high protein!

Vegan Power Chocolate Milk

-Put the following in a glass and enjoy for breakfast or before the gym! It's packed with vitamins and energy and you won't believe it's vegan:

-In any tall glass:
-Mix about 4 oz Chocolate Almond Milk UNSWEETENED mixed with 2 oz Vanilla Almond Milk UNSWEETENED (about 40 cal) --(this is also great on it's own for a low cal fix for a chocolate craving!)
-Superfood Green Powder (chocolate flavor) (about 30 cal)
-1 Packet 'Truvia'
-Ice cubes
-Stir thoroughly until powder dissolves, or if it doesn't, shake it up in a closed tupperware or blender.
